(Recipe served at Riverside Farmer’s Market on June 20, 2009)
Ingredients:
Juice of 1 lime ~ 2 tsp.
Lime zest – finely chopped
1 T Agave*
1 tsp crystallized ginger (add sparingly it can become too strong)*
Pecans chopped (optional) – prepare in bite sized pieces
Mint (optional) 3 – 4 leaves chopped
Fruit – in season
Strawberries – sliced and cut into small cubes (bite sized pieces)
Red grapes – sliced in half
Peaches – sliced and cut into small cubes (bite sized pieces)
Blackberries or dew berries
Blueberries
Other suggested fruit – pineapple, mangoes, honeydews, or cantaloupes. Use what you like and have on hand. (3 – 4 different fruits are sufficient.)
*Both Agave and crystallized ginger be purchased at supermarkers (Publix, Krogers,etc)
Preparation:
Prepare fruit, place all in a large bowl. Add lime zest, finely chopped, lime juice, Agave, pecans and mint. Toss gently, and then add crystallized ginger on top.
Serve immediately or cover and chill for service.
Note: The selection of fruit is based on what’s on hand and what’s fresh in the
market. Use the fruit in season.
