This is a little different than most recipes I've tried for
Turkey meatballs. The Spinach makes the meatballs green, but it also
keeps in the moisture. If the mushroom mixture is too loose add a
little bread crumbs to give it the consistency of paste. This is one
of the better turkey meatball recipes I've tried. I think that the
Portobellos really bring out the flavor. Overall rating out of

TURKEY MEATBALL AND PARMESAN SUB SANDWICHES (recipe by
Juan-Carlos Cruz)
2 large Portobello mushrooms, coarsely chopped, stems included
(about 1 ¼ cup) 1 - 10 oz box of frozen chopped spinach,
defrosted and drained (or 1 bag fresh - chopped) 2 egg whites
½ cup Parmesan, divided ½ tsp ground black pepper 6 cloves
garlic, crushed 1 tsp salt 1 tbl dried Italian seasoning 2
tbl Worcestershire sauce 1 lb lean ground turkey breast (with no
skin) 1 tbl olive oil 2 (14 oz) can crushed tomatoes 2
(6-inch) submarine sandwich rolls
Preparation:
Preheat broiler (or oven to 350)
In the bowl of a food processor, place the mushrooms, spinach,
egg whites, ¼ cup Parmesan, pepper, garlic, salt, Italian seasoning,
and Worcestershire sauce. Pulse until well blended. NO FOOD
PROCESSOR: put all of the above ingredients in a bowl and mix
well.
Transfer the mushroom mixture to a large mixing bowl. Add the
ground turkey. Using your hands, combine the whole mixture, being
careful not to over-mix. Form turkey mixture into equal sized
meatballs.
Heat a nonstick 12-in pan over medium heat and add olive oil. Add
the meatballs and brown on all sides, about 10 minutes. Drain any
liquid in the pan and discard. Return meatballs to heat and add
crushed tomatoes. Bring to simmer, then cover and cook meatballs for
15 minutes, stirring occasionally. (If not time for stove top
cooking and homemade sauce..place pan of meatballs in a 350° oven
for 20 minutes. Drain any liquid when finished and add jar marinara
sauce) Viola! Done!
Place meatballs either on bread with center dough removed and top
with cheese. Or keep it slimming and serve on a plate with salad.
Also good on top of pasta. Enjoy!!
